Keto Chicken Fajita

Chicken fajitas are super easy to make and oh so satisfying. I love that it comes with colorful veggies. It’s also really easy to customize and make keto friendly. You can wrap it up in homemade keto tortillas, store bought flaxseed lavash bread or turmeric coconut wrap

No low-carb wraps, no problem! Just eat it by itself or over a nice green salad. Make it your way and keep it interesting with different topping. I love toppings avocados, shredded cheese and sour cream. 

My ketofied chicken fajita was inspired by Cafe Delites’ Best Chicken Fajitas recipe. I love it because she only used 5 ingredients for the chicken fajita marinade. I cut my chicken thighs into bite sizes pieces to expedite the cooking process. 

Make this easy chicken recipe and have dinner ready within 30 minutes. It’ll be a big hit with the family. The chicken marinade is made with clean ingredients that are already in your pantry.

Chicken Fajita

This chicken fajita is easy peasy and takes about 30 minutes to come together. So versatile and great for leftovers the next day.

Equipment

  • Stove
  • Large Skillet

Ingredients

  • 2 lbs chicken thigh boneless & skinless, cut into bite size or strips
  • 3 whole bell peppers cut into strips
  • 1 whole onion thinly sliced

Chicken Marinade

  • 2 tbsp oil
  • 2 tbsp lemon juice
  • 2 tsp ground cumin
  • 2 tbsp minced garlic
  • 1 tbsp chopped cilantro
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 tsp Bae Blend #tacotuesday optional

Toppings

  • avocado sliced or cubed
  • full fat sour cream
  • cilantro
  • shredded cheese

Instructions

  • Combine and mix lemon juice, oil, garlic, cumin, salt, chili powder & cilantro in a bowl. Add chicken thighs and marinate for 30 minutes.
  • Preheat a large skillet on medium high heat and add fat of choice. Cook chicken for 7 to 10 minutes until there's no more pink in the center. Remove chicken and cover with foil to keep warm.
  • Add 1 tbsp oil and saute peppers & onions to the same skillet. It should be done in about 5 to 7 minutes.
  • Serve with low carb tortillas, flaxseed lavash bread, or coconut wrap. Top with chopped cilantro, shredded cheese, sour cream, and cubed avocados.

Instant Pot No Bean Keto Chili

Keto Beef Chili is one of my favorite one-pot meal. Everything is cooked in the Instant Pot. The best part is that once you close the lid, you don’t have to babysit it. You are free to go do something else without a care in the world (for dinner at least🤷🏽‍♀️). 

If you have package of ground beef, you are pretty much set. I always buy a few packages and put them in my freezer for easy meals like this. The other items like onion, garlic, canned tomatoes are pantry staples for a lot of home cooks. Spices like cumin and chili powder are commonly used in this recipe and many other. Chances are you probably have have everything you need to make it tonight!

A spoonful of this chili will sure to warm your heart.

Equipment

  • Pressure Cooker

Ingredients

  • 1-2 lbs ground beef
  • 2 pieces bacon cut in small pieces
  • 1 medium onion diced
  • 1 clove garlic minced
  • 1/4 cup tomato paste
  • 14.5 oz canned diced tomatoes
  • 1/4 cup broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp salt OR
  • 2 tbsp fish sauce (used in place of salt)

Toppings

  • shredded cheese
  • sour cream
  • chopped green onions
  • avocado cubes

Instructions

  • Let the inner pot come to temperature on saute mode, it should be ready when it says "hot"
  • If you're going to be using bacon, cook it now for a few minutes.
  • Use the bacon fat to saute the onions until it's translucent (3-5 mins). If not using bacon, add some oil and cook the onions.
  • Add in ground beef and saute until it's brown
  • Incorporate garlic, tomato paste, diced tomatoes, beef broth, cumin, chili powder and salt or fish sauce
  • Mix all the ingredients well and cook on high pressure for 6 minutes. Allow the pressure to release naturally
  • Taste and adjust seasoning to your liking
  • Add your favorite toppings on top and enjoy while it's hot

Keto Chicken Fajita Wrap🐔🌯

I love it when I can repurpose leftover proteins for another meal. Well, this is exactly what I did with the chicken fajita from dinner.

I found some Tumeric Coconut Wrap in my pantry and it was exactly what I needed to make a chicken wrap. I just had to microwave the chicken, spread it on the wrap and added some cheese and veggies on top. It was so good and different enough from dinner that it was exciting.

Tasty and quick low carb chicken wrap🌯

I got the coconut wrap from Thrive Market, but I’ve seen them at Walmart and other online retailer. This particular wrap is tumeric flavor and it’s my favorite. I love the yellow color. It’s a combination of sweetness from the coconut and the intoxicating fragrance of the tumeric. The wrap is soft and pliable like a regular tortilla or any other conventional wraps.
