Can you eat pho now that you’ve gone low carb?

The answer is YES!

Pho can be keto friendly if you make it at home and control the ingredients. I’ve only made my pho broth in the Instant Pot and I was shocked at how easy it was compared to the traditional stove-top method. The only ingredients that goes into my bone broth are bones, vegetables, pho spices and seasonings. 

There are quite a few low carb noodle options that are just as tasty as the traditional pho noodles. My favorite low carb noodle is shiratake (not to be confused for shiitake mushrooms). Shiratake or konjac yam noodles have been popular in Asian cuisine for centuries. These noodles are zero calories and low in carbs because they are 97% water and 3% fiber.
